Make the Dragonfruit Base
- Combine the diced dragonfruit, mango, sugar, water, and lemon juice in a medium saucepan over medium heat. Bring to a boil, then reduce heat to low and simmer for 10 minutes, stirring occasionally. Use a potato masher to crush the fruit as it cooks. Stir in the dragonfruit powder until well combined.
- Pour the fruit mixture into a blender or food processor and blend until smooth. Transfer the dragonfruit base to a mason jar and refrigerate until completely chilled before using.
Assemble the Refresher
- To assemble each refresher, fill a cocktail shaker with 1 cup of ice cubes. Add 1/2 cup of the chilled dragonfruit base, 1/2 cup of lemonade, 1/2 teaspoon of green coffee powder, and a few pieces of dried dragonfruit. Secure the lid and shake vigorously for 20 to 30 seconds.
- Remove the lid and pour the entire mixture into a tall glass. Add more ice if desired and garnish with additional dried dragonfruit pieces. Repeat with the remaining ingredients for a second serving. Serve immediately and enjoy.

Notes
Use fresh, ripe fruit for the best flavor.
Cool the dragonfruit base completely and shake well before using.
If you don't have a cocktail shaker, use a mason jar with a tight-fitting lid.
You can also skip the shaker and simply stir the ingredients together in a glass.
This recipe makes two grande-size servings (about 16 fl oz each) or one trenta-size serving (about 30 fl oz).
For a sweeter drink, add a little more sugar or honey to taste.
Store leftover dragonfruit base in the refrigerator for up to 3 days.
