Ingredients

  • 1 pound ripe peaches preferably California-grown, finely diced
  • 1 large Roma tomato finely diced
  • 1/2 small red onion finely diced
  • 1/2 medium jalapeño pepper seeds removed if desired, minced
  • 2 tablespoons fresh cilantro finely chopped
  • Juice from 1 large lime
  • 1/2 teaspoon kosher salt plus more to taste
  • 1/4 teaspoon freshly ground black pepper plus more to taste

Method

  1. In a medium-sized mixing bowl, combine the diced peaches, tomatoes, red onion, minced jalapeño, and fresh cilantro. Squeeze the juice from the lime directly over the mixture, then season with salt and black pepper.
  2. Gently stir all the ingredients together until thoroughly combined. Cover the bowl and allow the salsa to rest for at least 15 minutes at room temperature to let the flavors meld before serving.

Notes

For the best flavor, ensure your peaches are perfectly ripe and fragrant.
Feel free to adjust the amount of jalapeño to suit your preferred level of spice.
This salsa is fantastic served with tortilla chips, or as a vibrant topping for grilled chicken, fish, or pork tacos.
Store any leftover salsa in an airtight container in the refrigerator for up to 3 days.
For a different twist, try substituting nectarines or a ripe mango for some of the peaches.
Avoid over-mashing the ingredients when stirring; a gentle hand helps maintain texture.
Making the salsa about 30 minutes ahead of time allows the flavors to fully develop and marry beautifully.
