Ingredients
  

For the steak
  • 4 top sirloin steaks, about 1 inch thick
  • 1 teaspoon kosher salt or to taste
  • 1/2 teaspoon freshly ground black pepper or to taste
For the garlic parmesan fries
  • 2 russet potatoes, scrubbed and cut into fries about 1/2-inch thick
  • 2 tablespoons olive oil preferably California-grown
  • 4 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 cup freshly grated Parmesan cheese
  • 1/4 teaspoon kosher salt or to taste
  • 1/4 teaspoon freshly ground black pepper or to taste
  • 2 tablespoons fresh parsley, chopped for garnish

Method
 

  1. Preheat your oven to 375°F. Lightly grease a large sheet pan with olive oil or coat with nonstick spray.
  2. Arrange the potato fries in a single layer on one side of the prepared sheet pan. Drizzle with olive oil, then add the minced garlic, Italian seasoning, and Parmesan. Season with salt and pepper to taste and gently toss everything together to coat the fries evenly.
  3. Place the sheet pan in the oven and bake the fries for 20 to 25 minutes, stirring occasionally, until they are golden brown and crispy.
  4. Switch the oven to broil and let it heat up for a couple of minutes.
  5. Season both sides of each steak with salt and pepper to taste. Place the steaks in a single layer on the empty side of the sheet pan.
  6. Broil the steaks for 4 to 5 minutes per side for medium-rare, or until they reach your desired level of doneness. The edges should be nicely browned and charred.
  7. Serve the steaks and fries immediately, garnished with chopped parsley if desired. For extra flavor, top with a pat of garlic butter.

Notes

For best results, cut fries to a uniform thickness so they cook evenly. If your sheet pan is small, use two pans to avoid overcrowding.
