Caramelize the Onions
- Preheat the oven to 375°F.
- Melt the butter with the olive oil over medium-high heat. Add the sliced onions, salt, pepper, and thyme. Cook, stirring every couple of minutes, for 10 minutes until the onions are deeply browned and jammy. If they start to scorch, add a splash of chicken broth.
- Stir in the garlic and cook for 1 minute until fragrant.
Bake the Casserole
- Pour the white wine into the skillet and scrape up any browned bits from the bottom. Let it bubble for 2 minutes to reduce slightly.
- Turn off the heat. Stir in the chicken broth, heavy cream, dried orzo, shredded chicken, and Dijon mustard until well combined.
- Cover the skillet with a lid or foil and bake for 15 minutes.
- Remove the skillet from the oven, uncover, and stir gently. Sprinkle the Gruyère and Parmesan evenly over the top.
- Return the skillet to the oven uncovered and bake for 7 more minutes, until the cheese is golden and bubbly and the orzo is tender.
- Let rest for 5 minutes, scatter with fresh parsley, and serve.
