Make the Dressing
- In a medium mixing bowl, whisk together the mayonnaise, sour cream, and buttermilk until the mixture is completely smooth and creamy.
- Add the lemon juice, garlic powder, salt, and pepper. Stir well, then taste and adjust the seasoning to your liking.
- Fold in the crumbled blue cheese. For a smoother dressing, mash some of the cheese against the bowl with a fork; if you prefer a chunkier texture, leave the pieces intact.
- Cover the bowl tightly with plastic wrap or a lid and place it in the refrigerator for at least 30 minutes so the flavors can meld and the dressing thickens slightly.
- Give the dressing a final stir, then use it on salads, as a dip for chicken wings, or spooned over grilled steak or burgers.

For a lighter version, replace sour cream with plain Greek yogurt; the texture will be thicker and slightly tangier.
Keto friendly: omit the buttermilk and use 1/2 cup sour cream total, thinning with water if needed.
Choose a stronger blue cheese like Roquefort for a more assertive bite, or Gorgonzola for a milder, creamier finish.
Chill the dressing for at least 30 minutes; a few hours is even better for the flavors to fully develop.
Store leftovers in an airtight container in the refrigerator for up to 5 days. Stir before serving, as it may separate slightly.
