  • 4 fillets tilapia fillets
  • salt and freshly ground black pepper to taste
  • 1/2 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • 4 tablespoons unsalted butter melted
  • 4 cloves garlic minced
  • 2 tablespoons fresh Meyer lemon juice from about 1 lemon
  • 1/4 teaspoon Meyer lemon zest
  • 1 Meyer lemon sliced for garnish
  • red pepper flakes for garnish
  • fresh parsley chopped, for garnish

Method
 

  1. Preheat your oven to 400°F. Season the tilapia fillets on both sides with salt, pepper, paprika, thyme, and oregano. Arrange them in a single layer in a 9x13-inch baking dish.
  2. In a small bowl, whisk together the melted butter, minced garlic, Meyer lemon juice, and lemon zest. Pour this mixture evenly over the seasoned tilapia fillets.
  3. Bake the tilapia for 10 to 12 minutes, until the fish flakes easily with a fork and is opaque throughout.
  4. Garnish with a sprinkle of red pepper flakes, chopped parsley, and lemon slices. Serve immediately.

Notes

For a milder flavor, reduce the red pepper flakes or omit them entirely. You can substitute regular lemons if Meyer lemons are unavailable.
