- Heat the frozen hash brown patties in a toaster oven or air fryer according to the package directions. In the air fryer at 400°F (200°C), they take about 5 minutes and should turn golden and crisp.
- Cut the avocado in half, pop out the pit, and spoon the green flesh into a small bowl.
- Add the lemon juice, olive oil, and coarse salt to the avocado. Mash with a fork until creamy but still a little chunky.
- When the hash browns are crisp, divide the avocado mash evenly between them. Top each with the sliced cherry tomatoes and a pinch of coarse sea salt.

Notes
Use a ripe but slightly firm avocado so the mash stays textured and does not become watery.
If you do not have an air fryer, bake the hash browns at 425°F (220°C) for 10 to 12 minutes, flipping halfway through.
This recipe is naturally vegetarian; check the hash brown package to make sure it is also vegan if needed.
For a heartier brunch, top each toast with a fried egg or crumbled feta.
Make the avocado mash right before serving and add a little extra lemon juice if you want to keep it from browning.
Store leftover avocado mash and cooked hash browns separately in the refrigerator for up to a day, but reheat the hash browns in the air fryer to restore crispness.
Serve immediately after assembling so the hash brown base stays crunchy.
