- Preheat the oven to 350°F (175°C). Coat a 9x13 inch baking dish with butter or nonstick spray.
- In a large bowl, combine the shredded chicken, corn, mayonnaise, sour cream, 1 1/2 cups of the cheddar, lime juice, chili powder, cumin, garlic powder, onion powder, and smoked paprika.
- Season with salt and pepper to taste and stir until the mixture is thoroughly combined.
- Fold in the cilantro, then transfer the mixture to the prepared dish and spread it into an even layer.
- In a small bowl, mix the remaining 1/2 cup cheddar with the grated Parmesan and sprinkle the cheese blend over the casserole.
- In another bowl, toss the crushed tortilla chips with the melted butter and scatter them evenly over the cheese layer.
- Bake for 25 to 30 minutes, until the casserole is bubbling around the edges and the top is golden.
- Let the casserole rest for 5 minutes before serving. Garnish with extra cilantro, if desired.
