Ingredients

  • 1 1/2 cups 2% milkfat cottage cheese
  • 1/4 cup chocolate protein powder high-quality brand for best flavor
  • 1 1/2 tablespoons unsweetened cocoa powder
  • 1/4 cup pure maple syrup

Method

  1. Place the cottage cheese in a food processor and blend on high until velvety smooth, about 3 to 5 minutes, scraping down the sides occasionally.
  2. Add the protein powder, cocoa powder, and maple syrup, then pulse in short bursts to start combining. Scrape the sides and bottom of the bowl with a spatula.
  3. Process the mixture continuously until it is fully blended, smooth, and slightly fluffy, similar to a mousse texture.
  4. Enjoy immediately, or divide the mousse into small jars and refrigerate until ready to serve.

Notes

Use a high-quality chocolate protein powder for the best flavor and smooth texture. For a richer mousse, substitute full-fat cottage cheese; the flavor stays similar, but saturated fat increases. Stick with 2% cottage cheese to keep the mousse lighter. Serve with fresh berries or a sprinkle of flaky salt for contrast. Store leftovers in an airtight container in the fridge for up to 3 days. If you need a thicker texture, add an extra scoop of protein powder, but adjust the maple syrup to taste. Double-check that flavored protein powder does not contain gluten if you need the dessert to be gluten-free.
