Ingredients
  

  • 1 pound short pasta such as rotini, fusilli, or elbow macaroni uncooked
  • 2 cups dill pickles finely chopped
  • 1/2 cup white onion finely chopped
  • 1 cup Colby Jack cheese cut into small cubes
  • 1 cup mayonnaise
  • 1/2 cup sour cream
  • 2 tablespoons fresh dill chopped, plus more for garnish
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1/2 cup pickle juice from the pickle jar

Method
 

  1. Bring a large pot of salted water to a boil and cook the pasta according to the package directions until al dente, tender but still firm to the bite.
  2. Drain the pasta in a colander and rinse it under cold running water until it is completely cool. Let it drain well.
  3. In a medium bowl, whisk the mayonnaise, sour cream, pickle juice, fresh dill, salt, and pepper until smooth and creamy. Set the dressing aside.
  4. In a large salad bowl, combine the cooled pasta, chopped pickles, onion, and cheese cubes.
  5. Pour the dressing over the pasta mixture and fold gently until every ingredient is evenly coated. Cover the bowl and chill for at least 2 hours before serving.
  6. When ready to serve, sprinkle with extra fresh dill if desired.
  7. Store leftovers in an airtight container in the refrigerator. The salad stays fresh for up to one week when kept chilled.
