Ingredients
  

  • 4 boneless skinless chicken breasts cut into 1-inch cubes
  • 1/2 cup unsalted butter 1 stick, melted
  • 4 cloves garlic minced
  • 1 tablespoon freshly squeezed Meyer lemon juice or regular lemon juice
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 1 tablespoon fresh parsley chopped, plus more for serving
  • to taste kosher salt and freshly ground black pepper
  • to taste red pepper flakes optional, for heat

Method
 

  1. Preheat a gas or charcoal grill to medium-high heat, about 375°F (190°C). Lightly oil the grill grates to prevent sticking.
  2. In a medium bowl, whisk together the melted butter, garlic, Meyer lemon juice, Worcestershire sauce, Dijon mustard, parsley, and a pinch of salt and pepper until smooth and well combined.
  3. Thread the chicken cubes onto skewers, then brush or roll them in the butter mixture until evenly coated on all sides.
  4. Grill the skewers for 5 to 7 minutes total, turning every 2 to 3 minutes, until golden brown and cooked through with an internal temperature of 165°F (74°C).
  5. If you want extra heat, sprinkle red pepper flakes over the skewers during the last 2 minutes of grilling.
  6. Remove the skewers from the grill, let them rest for 3 to 5 minutes, then serve warm with any fresh parsley and your favorite sides.

Notes

Soak wooden skewers in water for 30 minutes before grilling to prevent burning.
