California-Style Shrimp Scampi Linguine with Meyer Lemon

Ingredients
  

  • 8 ounces dry linguine
  • 1 pound medium shrimp peeled and deveined
  • 2 tablespoons extra-virgin olive oil preferably California olive oil
  • 4 cloves garlic minced or thinly sliced
  • 1/4 teaspoon red pepper flakes or to taste
  • 1/2 cup low-sodium chicken broth
  • 2 tablespoons fresh lemon juice preferably Meyer lemon, from about 1 lemon
  • to taste kosher salt and freshly ground black pepper
  • 2 tablespoons chopped fresh parsley
  • 1/4 cup grated Parmesan cheese for serving

Method
 

  1. Fill a large pot with well-salted water and bring it to a rolling boil. Add the linguine and cook until just al dente according to the package directions, usually about 8 to 10 minutes. Before draining, scoop out roughly 1/2 cup of the starchy pasta water and set it aside.
  1. Heat the olive oil in a large skillet over medium-high heat. Add the shrimp in a single layer and season lightly with salt and black pepper. Cook for 2 minutes per side until the shrimp are pink and opaque, then transfer them to a plate and set aside.
  1. Reduce the heat to medium and keep the same skillet. Add the garlic and red pepper flakes, stirring for about 30 seconds until fragrant and just softened, being careful not to brown the garlic. Pour in the chicken broth and lemon juice, scraping up any browned bits from the bottom of the pan. Let the mixture simmer for 2 to 3 minutes, or until slightly reduced.
  1. Return the shrimp to the skillet and toss gently to coat them in the sauce. Add the drained linguine to the skillet and toss everything together until the pasta is evenly coated. If the sauce looks dry, add a splash of the reserved pasta water to loosen it up.
  1. Remove the skillet from the heat and stir in the fresh parsley. Taste and adjust the seasoning with additional salt and pepper if needed. Serve immediately with grated Parmesan cheese on top for an extra layer of savory flavor.

Notes

Use fresh Meyer lemon juice for the brightest flavor; regular lemons work too if Meyer lemons are unavailable.
Choose low-sodium chicken broth and season with salt carefully, since the Parmesan and broth add natural saltiness.
Swap in vegetable broth and skip the shrimp for a vegetarian pasta, or add white beans for extra protein.
Keep shrimp tender by cooking them just until opaque and reheating leftovers gently over medium-low heat.
Store leftovers in an airtight container in the fridge for up to 2 days.
For extra richness, swirl in 1 tablespoon of butter after removing the pan from the heat.
