California Salmon Pasta Without Cream

A creamy, no-dairy salmon pasta with broccoli, baked in one dish for an easy weeknight dinner.

Ingredients
  

  • 10 oz penne, rigatoni, or rotini pasta
  • 1/4 cup California olive oil divided
  • 12 oz broccoli florets torn into bite-size pieces
  • 1 lb center-cut salmon fillet skin on or off
  • 4 oz fresh mozzarella cheese torn into small pieces
  • 4 cloves garlic minced
  • 1 tablespoon Italian seasoning without onion if needed
  • 1/2 to 3/4 cup reserved pasta water
  • kosher salt and black pepper to taste

Method
 

  1. Preheat the oven to 425°F. Bring a large pot of salted water to a boil. In a 9x13-inch baking dish, toss the broccoli with 2-3 tablespoons of olive oil and push to one side. Place the cream cheese in the center (if using). Pat the salmon dry, place it on the other side, and drizzle with the remaining olive oil. Sprinkle everything with Italian seasoning and garlic, tossing the garlic with the broccoli. Season with salt and pepper.
  2. Bake for 15-17 minutes, until the salmon is cooked through and the broccoli is tender with crispy edges. Meanwhile, cook the pasta according to package directions. Reserve at least 1 cup of pasta water before draining.
  3. Remove the salmon from the dish and set aside. Pour in 1/2 cup of the reserved pasta water and stir the broccoli, cream cheese (if used), and pasta together until well combined. Tear in the mozzarella pieces and stir until melted. If needed, return the dish to the oven for 2-3 minutes to melt.
  4. Add more pasta water if needed for a creamy texture. Taste and adjust seasoning. Break the salmon into bite-sized pieces and sprinkle over the pasta. Serve warm.

Notes

For a cream-free version, omit cream cheese and use only mozzarella for richness. Substitute Boursin or goat cheese for cream cheese if desired. For gluten-free, use your favorite gluten-free pasta and cook al dente. Store leftovers in an airtight container in the fridge for up to 2 days. Reheat gently with a splash of water or broth to restore creaminess. A squeeze of Meyer lemon adds brightness without overpowering.
