California Jalapeño Popper Smothered Chicken

Ingredients
  

  • 4 boneless, skinless chicken breasts
  • 1 cup cream cheese softened
  • 1 cup shredded cheddar cheese preferably sharp
  • 1/2 cup diced jalapeños fresh or pickled
  • 1/2 cup panko breadcrumbs or regular breadcrumbs
  • 1/4 cup sliced green onions
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • salt and freshly ground black pepper to taste

Method
 

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish.
  2. In a medium bowl, stir together the softened cream cheese, shredded cheddar, diced jalapeños, sliced green onions, garlic powder, onion powder, and a pinch of salt and pepper until well combined.
  3. Place the chicken breasts in the prepared baking dish in a single layer. Spread the cream cheese mixture evenly over the top of each breast.
  4. Sprinkle the panko breadcrumbs over the cheese layer, pressing gently to help them adhere.
  5. Bake for 25 to 30 minutes, or until the chicken is cooked through (internal temperature reaches 165°F) and the topping is golden and bubbly.
  6. Let the dish rest for 5 minutes before serving. Garnish with extra green onions or diced jalapeños if desired.

Notes

For a lighter version, use reduced-fat cream cheese and cheddar.
If using fresh jalapeños, remove seeds and membranes for less heat.
Make ahead: Assemble the dish (without breadcrumbs) up to 24 hours in advance. Add breadcrumbs just before baking.
Leftovers keep well in the fridge for up to 3 days; reheat in the oven or microwave.
Serve with a side of rice, roasted vegetables, or a simple green salad.
For extra crunch, broil the chicken for the last 2 minutes of baking.
