Ingredients
Method
Make the cherry syrup
- Combine the pitted cherries, Meyer lemon juice, and sugar in a blender. Blend until completely smooth, about 30 seconds.
- Pour the mixture through a fine-mesh strainer set over a bowl, pressing on the solids to extract as much liquid as possible. Discard the solids. The cherry syrup can be refrigerated in a sealed container for up to a week.
Assemble the drinks
- Fill a tall glass halfway with ice. Add 3 tablespoons of the cherry syrup to the glass.
- Top with about 1 cup of sparkling water (or still water) and stir gently to combine. Garnish with a lemon slice and a fresh cherry. Serve immediately. For still water, you can mix a full pitcher and refrigerate; for sparkling water, make each glass individually to keep the fizz.

Notes
For a sweeter lemonade, increase the sugar to 1 cup. You can use frozen cherries if fresh are not available; thaw them first. To make a pitcher version with still water, multiply the syrup and water by 6 and stir together in a pitcher. Avoid over-blending the cherries to prevent a bitter flavor from the pits. Serve over plenty of ice for the most refreshing experience.
