Jenny XOXO BAKED SMOKED TURKEY LEGS RECIPE Brine: 1/2 cup brown sugar 1/2 cup salt 2 tbsp liquid smoke 4 cups water, divided (or enough to cover turkey) Add and stir brine ingredients until sugar and salt mostly dissolve in a bowl or zip lock bag (I used both to keep bag upright and legs covered). Turkey legs, I used 3 that weighed 2.3 lbs (only .50!!!) Wash turkey legs with cold water and place in brine refrigerate for 4 hours up to overnight Remove turkey legs from brine. Pat dry with paper towels to remove excess liquid (will help to brown skin & cook). Cover a baking sheet with foil and place turkey legs on sheet. Coat (brush or use spoon) turkey legs lightly with olive oil on both sides – adds flavor and keeps the skin from drying out. Sprinkle and rub seasoning (Cajun/Creole Seasoning) on all sides of turkey legs. Bake in a preheated 400F oven for 20 minutes. Turn oven heat to 300F and cook for 15 to 45 minutes until 165F internally (use meat thermometer or poke with fork to see if juices run clear).
